Description

A simple, delicious, and healthy toast topped with creamy avocado, fresh tomatoes, and salty feta, perfect for any meal or snack.


Ingredients

  • 2 slices sourdough bread, toasted
  • 1 ripe avocado, sliced
  • 1/2 cup cherry tomatoes, blistered or fresh
  • 2 tbsp basil pesto
  • 2 tbsp crumbled feta cheese
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Toast sourdough until golden and crispy.
  2. Place sliced avocado over the toast and add a pinch of salt and pepper.
  3. Spread basil pesto generously on top.
  4. Add cherry tomatoes, lightly blistered or fresh.
  5. Sprinkle crumbled feta and drizzle with olive oil.

Notes

Serve immediately for the best flavor. Try adding a poached egg on top for extra protein.
