- 2 slices sourdough bread, toasted
- 1 ripe avocado, sliced
- 1/2 cup cherry tomatoes, blistered or fresh
- 2 tbsp basil pesto
- 2 tbsp crumbled feta cheese
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Toast sourdough until golden and crispy.
- Place sliced avocado over the toast and add a pinch of salt and pepper.
- Spread basil pesto generously on top.
- Add cherry tomatoes, lightly blistered or fresh.
- Sprinkle crumbled feta and drizzle with olive oil.
