Description

A delicious and healthy breakfast featuring creamy avocado and perfectly cooked jammy eggs on toasted bread.


Ingredients

  • 1 slice sourdough or multigrain bread (toasted)
  • 1 ripe avocado
  • 2 eggs
  • 1 tsp lemon juice
  • Salt & freshly cracked black pepper to taste
  • 1 tbsp chopped red onion (optional)
  • Chopped green onions or chives for garnish

Instructions

  1. Bring water to a boil in a small pot. Once boiling, gently add the eggs and cook for 6.5–7 minutes.
  2. After cooking, cool the eggs under cold running water. Once cool, peel the eggs and set aside.
  3. In a bowl, mash the ripe avocado. Add lemon juice, salt, pepper, and red onion if you’re using it. Mix well.
  4. Toast your bread until it is golden and crisp.
  5. Spread the mashed avocado generously over the toasted bread.
  6. Slice the jammy eggs in half and place them on top of the avocado spread.
  7. Sprinkle with more pepper and garnish with chopped green onions or chives.

Notes

Ensure your avocado is ripe for the best flavor. Use a timer for perfect jammy eggs and toast your bread just before serving.
