A delicious and healthy breakfast featuring creamy avocado and perfectly cooked jammy eggs on toasted bread.
Ingredients

- 1 slice sourdough or multigrain bread (toasted)
- 1 ripe avocado
- 2 eggs
- 1 tsp lemon juice
- Salt & freshly cracked black pepper to taste
- 1 tbsp chopped red onion (optional)
- Chopped green onions or chives for garnish
Instructions
- Bring water to a boil in a small pot. Once boiling, gently add the eggs and cook for 6.5–7 minutes.
- After cooking, cool the eggs under cold running water. Once cool, peel the eggs and set aside.
- In a bowl, mash the ripe avocado. Add lemon juice, salt, pepper, and red onion if you’re using it. Mix well.
- Toast your bread until it is golden and crisp.
- Spread the mashed avocado generously over the toasted bread.
- Slice the jammy eggs in half and place them on top of the avocado spread.
- Sprinkle with more pepper and garnish with chopped green onions or chives.
Notes
Ensure your avocado is ripe for the best flavor. Use a timer for perfect jammy eggs and toast your bread just before serving.
