Ingredients

  • 2 slices whole grain or sourdough bread
  • 1 avocado
  • 2โ€“3 soft-boiled eggs
  • 1/2 cup cherry tomatoes
  • 1 cup arugula or mixed greens
  • 2 tbsp cream cheese or ricotta
  • 1 tsp olive oil
  • 1/2 tsp sesame seeds or everything bagel seasoning
  • Salt
  • Freshly cracked black pepper
  • Pinch of chili flakes (optional)

Instructions

  1. Boil the eggs in water for about 7 minutes for a soft center. After cooking, peel the eggs and slice them in half.
  2. Toast the bread slices to your liking and spread cream cheese or ricotta on each piece.
  3. Neatly layer slices of avocado on one of the toast pieces. Sprinkle with sesame seeds, salt, and freshly cracked black pepper.
  4. On the side, arrange the arugula, halved cherry tomatoes, and the soft-boiled eggs.
  5. Drizzle olive oil over the greens. If desired, add a pinch of chili flakes for some spice, and enjoy fresh!
