- 4 large eggs, hard-boiled and chopped
- 1 ripe avocado, mashed
- 1 cup fresh spinach, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon Greek yogurt
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
Instructions
- In a large bowl, combine the chopped hard-boiled eggs and mashed avocado.
- Add the finely chopped spinach and red onion.
- In a small bowl, mix together the Greek yogurt, Dijon mustard, and lemon juice.
- Pour the dressing over the egg and avocado mixture and gently stir until combined.
- Season with salt and pepper to taste. Serve chilled.
