Ingredients

  • 8 oz bowtie pasta (farfalle)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the bowtie pasta according to package instructions, then drain and set aside to cool.
  2. In a large bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
  3. Add the cooled pasta to the bowl and toss gently.
