- 1 ripe avocado
- 2 eggs
- 1/2 tbsp butter or olive oil
- Pinch of salt
- Pinch of black pepper
- Pinch of dried parsley or Italian seasoning (optional)
- 1/2 cup fresh strawberries, sliced
Instructions
- Toast your bread slices until golden and crispy.
- Scoop and mash the avocado with a pinch of salt, then spread it on the toast.
- Cook the eggs sunny-side up in butter or oil.
- Top each toast with an egg and add black pepper and herbs if desired.
- Serve with fresh sliced strawberries on the side.
