- 2 slices bread
- 1 avocado
- 2 eggs
- Salt
- Pepper
- Chili flakes
- Olive oil
Instructions
- Toast the bread until it’s golden brown.
- While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.
- In a pan, fry or poach the eggs according to your preference.
- Once the bread is done toasting, spread the mashed avocado on each slice.
- Place one egg on top of each slice of toast and sprinkle with chili flakes.
Notes
Best served immediately while warm. Experiment with toppings such as sliced tomatoes or radishes.
