Description

A simple yet delicious meal combining creamy avocado and perfectly cooked eggs on crispy toast. Perfect for breakfast or a light snack.


Ingredients

  • 2 slices bread
  • 1 avocado
  • 2 eggs
  • Salt
  • Pepper
  • Chili flakes
  • Olive oil

Instructions

  1. Toast the bread until it’s golden brown.
  2. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.
  3. In a pan, fry or poach the eggs according to your preference.
  4. Once the bread is done toasting, spread the mashed avocado on each slice.
  5. Place one egg on top of each slice of toast and sprinkle with chili flakes.

Notes

Best served immediately while warm. Experiment with toppings such as sliced tomatoes or radishes.
