Description

Ingredients

  • 1 cup cooked white rice
  • 2 eggs, scrambled
  • 1/2 avocado, diced
  • 1/3 cup cooked sausage (chopped, kielbasa, or chorizo)
  • 1 tsp chili crisp or hot sauce (optional)
  • Salt & pepper to taste
  • Optional: sesame oil or soy sauce drizzle

Instructions

  1. Scramble the eggs in a pan over medium heat with a little oil, seasoning with salt and pepper.
  2. In the same pan, fry chopped sausage until crisped and golden.
  3. Reheat or freshly cook the rice and fluff it up.
  4. In a deep bowl, layer the rice, scrambled eggs, sausage pieces, and diced avocado.
  5. Drizzle chili crisp, hot sauce, or soy sauce on top if desired.
