- 2 eggs, scrambled
- 1/2 avocado, diced
- 1/3 cup cooked sausage (chopped, kielbasa, or chorizo)
- 1 tsp chili crisp or hot sauce (optional)
- Salt & pepper to taste
- Optional: sesame oil or soy sauce drizzle
Instructions
- Scramble the eggs in a pan over medium heat with a little oil, seasoning with salt and pepper.
- In the same pan, fry chopped sausage until crisped and golden.
- Reheat or freshly cook the rice and fluff it up.
