- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 4 oz fresh mozzarella, sliced or torn
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic glaze
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- Fresh basil leaves, for garnish
- 1 teaspoon lemon juice (optional)
Instructions
- Toast the slices of bread until golden and crisp.
- In a bowl, mash the avocados with a pinch of salt, pepper, and lemon juice (if using).
- Spread the mashed avocado generously over each slice of toast.
- Top with sliced or torn mozzarella and halved cherry tomatoes.
- Drizzle with olive oil and balsamic glaze.
- Finish with fresh basil leaves and a light sprinkle of sea salt and pepper.
- Serve immediately while the toast is crisp and fresh.
