Ingredients

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 4 oz fresh mozzarella, sliced or torn
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves, for garnish
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Toast the slices of bread until golden and crisp.
  2. In a bowl, mash the avocados with a pinch of salt, pepper, and lemon juice (if using).
  3. Spread the mashed avocado generously over each slice of toast.
  4. Top with sliced or torn mozzarella and halved cherry tomatoes.
