A refreshing salad featuring blanched asparagus, cherry tomatoes, creamy burrata cheese, and crunchy pine nuts, perfect for a light lunch or side dish.


Ingredients

  • 1 bunch (about 200g) asparagus, ends trimmed
  • 1 cup cherry tomatoes, halved
  • 1 ball burrata cheese
  • 2 tbsp pine nuts

Instructions

  1. Blanch the asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and cool in ice water.
  2. In a large bowl, combine the blanched asparagus, halved cherry tomatoes, and pine nuts.
  3. Tear the burrata cheese and add it to the salad.
  4. Drizzle with olive oil and season with salt and pepper to taste.
  5. Toss gently and serve immediately.

Notes

Serve chilled or at room temperature. For added flavor, toast pine nuts before adding to the salad.
