- 1 bunch (about 200g) asparagus, ends trimmed
- 1 cup cherry tomatoes, halved
- 1 ball burrata cheese
- 2 tbsp pine nuts
Instructions
- Blanch the asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and cool in ice water.
- In a large bowl, combine the blanched asparagus, halved cherry tomatoes, and pine nuts.
- Tear the burrata cheese and add it to the salad.
- Drizzle with olive oil and season with salt and pepper to taste.
- Toss gently and serve immediately.
Notes
Serve chilled or at room temperature. For added flavor, toast pine nuts before adding to the salad.
