- 2 chicken breasts
- 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the cream cheese, mozzarella, garlic, salt, and pepper until well combined.
- Take the chicken breasts and make a pocket in each by slicing them horizontally.
- Stuff each pocket with the asparagus mixture.
- Heat olive oil in a skillet over medium heat and sear the chicken breasts on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until the chicken is cooked through and the juices run clear.
- Remove from the oven and let rest for a few minutes before serving.
Notes
For best results, do not overstuff the chicken. Fresh ingredients enhance flavor. Experiment with different herbs and cheeses.
