Ingredients

  • 2 chicken breasts
  • 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cream cheese, mozzarella, garlic, salt, and pepper until well combined.
  3. Take the chicken breasts and make a pocket in each by slicing them horizontally.
  4. Stuff each pocket with the asparagus mixture.
  5. Heat olive oil in a skillet over medium heat and sear the chicken breasts on both sides until golden brown.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes until the chicken is cooked through and the juices run clear.
  7. Remove from the oven and let rest for a few minutes before serving.

Notes

For best results, do not overstuff the chicken. Fresh ingredients enhance flavor. Experiment with different herbs and cheeses.
