Description

A quick and delicious dinner featuring tender salmon fillets coated in a sweet and tangy apricot Dijon glaze.


Ingredients

  • 4 (6-ounce) salmon fillets
  • 1/4 cup apricot preserves or jam
  • 1 tablespoon grainy mustard
  • 1 tablespoon Dijon mustard
  • 1 tablespoon low sodium soy sauce (or tamari for gluten-free)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the apricot preserves, grainy mustard, Dijon mustard, and soy sauce.
  3. Place the salmon fillets in a baking dish and brush the glaze mixture evenly over each fillet.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily.
  5. Serve hot, optionally garnished with fresh herbs.

Notes

For extra flavor, drizzle more glaze on top before serving. You can also broil the salmon for 2 minutes at the end for a crunchy texture.
