A quick and delicious dinner featuring tender salmon fillets coated in a sweet and tangy apricot Dijon glaze.

- 4 (6-ounce) salmon fillets
- 1/4 cup apricot preserves or jam
- 1 tablespoon grainy mustard
- 1 tablespoon Dijon mustard
- 1 tablespoon low sodium soy sauce (or tamari for gluten-free)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the apricot preserves, grainy mustard, Dijon mustard, and soy sauce.
- Place the salmon fillets in a baking dish and brush the glaze mixture evenly over each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily.
- Serve hot, optionally garnished with fresh herbs.
Notes
For extra flavor, drizzle more glaze on top before serving. You can also broil the salmon for 2 minutes at the end for a crunchy texture.
