Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk
  • 1/2 cup apple pie filling, finely chopped
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)
  • 1/4 teaspoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  3. Add the cold, cubed butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined (do not overmix).
  5. Gently fold in the chopped apple pie filling, brown sugar, and ground cinnamon.
  6. Turn the dough out onto a floured surface. Gently pat it into a 1-inch thick rectangle.
  7. Use a round cutter to cut out biscuits. Place them on the prepared baking sheet.
  8. Mix the granulated sugar and 1/4 teaspoon cinnamon. Sprinkle over the tops of the biscuits.
  9. Bake for 12-15 minutes, or until golden brown. Let cool slightly before serving.

Notes

For best results, keep butter cold and do not overmix the dough.
