  • 3 cups graham cracker crumbs
  • 5.2 oz unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  • 28 oz cream cheese, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 4 eggs
  • 2 tablespoons cornstarch
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/3 teaspoon kosher salt
  • 3.1 oz unsalted butter, melted
  • 1/3 cup brown sugar

Instructions

  1. Prepare the Apple Filling: In a saucepan over medium heat, combine butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and kosher salt. Add the sliced apples, cover, and cook for about 10 minutes until softened. Stir in the cornstarch mixed with water until there are no lumps. Set aside to cool.
  2. Make the Crust: Preheat oven to 350°F (180°C). In a bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Press the mixture into the bottom of a springform pan and bake for 7-8 minutes. Let it cool.
  3. Make the Cheesecake Filling: Lower the oven temperature to 280°F (140°C). In a bowl, beat cream cheese, sugar, and vanilla until creamy. Gradually add sour cream and eggs, mixing until smooth. Add cornstarch and mix until combined.
  4. Make the Crumble Topping: In a bowl, mix flour, oats, brown sugar, kosher salt, cinnamon, and melted butter until well combined.
  5. Assembly: Pour half of the cheesecake mixture onto the crust. Top with the apple filling, then add the remaining cheesecake mixture and crumble topping. Bake for about 1 hour. Let cool in the oven for 1-2 hours.
  6. Chill and Serve: Refrigerate for at least 5 hours. Release from the pan, drizzle with caramel sauce, or dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container in the fridge for about 5-7 days. Can be frozen for up to 2 months.
