  • 3 cups graham cracker crumbs
  • 5.2 oz unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  • 28 oz cream cheese, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 4 eggs
  • 2 tablespoons cornstarch
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/3 teaspoon kosher salt
  • 3.1 oz unsalted butter, melted
  • 1/3 cup brown sugar

Instructions

  1. Prepare the Apple Filling: Peel, core, and slice the apples. In a saucepan over medium heat, combine butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and kosher salt. Stir until the butter melts. Add the sliced apples, cover, and cook for about 10 minutes until softened. Stir in cornstarch mixed with water and set aside to cool completely.
  2. Make the Crust: Preheat the oven to 350°F (180°C) and prepare a 10-inch springform pan with parchment paper. Pulse graham crackers until fine crumbs form. In a mixing bowl, combine graham cracker crumbs, granulated sugar, cinnamon, and melted butter, then press into the bottom of the pan. Bake for 7-8 minutes and let cool.
  3. Make the Cheesecake Filling: Lower the oven temperature to 280°F (140°C). In a large bowl, beat cream cheese, granulated sugar, and vanilla until creamy. Add sour cream and mix well. In a small bowl, whisk the eggs and gradually add to the mixture. Sift in cornstarch and mix until smooth.
  4. Make the Crumble Topping: In a medium bowl, mix flour, oats, brown sugar, kosher salt, cinnamon, and melted butter until combined.
  5. Assembly: Pour half of the cheesecake mixture onto the crust, top with apple filling, then pour remaining cheesecake mixture over apples and add crumble topping. Bake for about 1 hour. Cool for 1-2 hours with the oven door slightly open.
  6. Chill and Serve: Wrap tightly in plastic wrap and refrigerate for at least 5 hours. Release from the pan and drizzle with caramel sauce or dust with powdered sugar before serving.
