Ingredients

  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp lemon juice
  • 4 tbsp water
  • 1/2 cup unsalted butter
  • 4 tsp cornstarch (mixed with a little water)
  • 3 cups graham cracker crumbs
  • 5.2 oz unsalted butter, melted
  • 1 tbsp granulated sugar
  • 1/2 tsp cinnamon
  • 28 oz cream cheese, room temperature
  • 2 tsp vanilla extract
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 4 eggs
  • 2 tbsp cornstarch
  • 3/4 cup all-purpose flour
  • 1/2 cup oats (rolled or quick oats)
  • 1 tsp cinnamon
  • 1/3 tsp kosher salt
  • 3.1 oz melted butter
  • 1/3 cup brown sugar
  • Caramel sauce or powdered sugar for topping (optional)

Instructions

  1. Make the Apple Pie Filling: In a saucepan over medium heat, add butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and kosher salt. Stir until the butter melts. Add apples and mix gently, cover, and cook over medium-low heat for 10 minutes until the apples soften. Stir in the cornstarch slurry and cook until no lumps remain. Set aside to cool.
  2. Prepare the Crust: Preheat the oven to 180°C (350°F). Line a 10-inch springform pan with parchment paper. Pulse the graham crackers into fine crumbs. Mix crumbs with sugar, cinnamon, and melted butter until evenly coated, then press into the bottom of the prepared pan. Bake for 7-8 minutes, then let cool.
  3. Make the Cheesecake Filling: Lower the oven temperature to 140°C (280°F). In a bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add sour cream and mix well. Whisk the eggs separately, then add to the cheesecake mixture and mix until smooth. Sift in the cornstarch and mix until no lumps remain.
  4. Make the Crumble Topping: Combine flour, oats, brown sugar, kosher salt, cinnamon, and melted butter in a bowl until crumbly.
  5. Assemble the Cheesecake: Pour half of the cheesecake mixture onto the crust, spread the apple filling over it, pour the remaining cheesecake mixture on top, and sprinkle with crumble topping.
  6. Bake: Bake at 140°C (280°F) for about 1 hour until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let cool for 1-2 hours. Refrigerate for at least 5 hours.
  7. Serve: Carefully remove from the springform pan. Drizzle with caramel sauce or dust with powdered sugar before serving.

Notes

For best flavor, use a mix of sweet and tart apples. Allow the cheesecake to chill properly for enhanced flavor.
