  • 3 cups graham cracker crumbs
  • 5.2 oz unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  • 28 oz cream cheese, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 4 eggs
  • 2 tablespoons cornstarch
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/3 teaspoon kosher salt
  • 3.1 oz unsalted butter, melted
  • 1/3 cup brown sugar

Instructions

  1. Prepare the Apple Filling: In a saucepan, combine butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and salt. Add sliced apples and cook for 10 minutes. Stir in cornstarch mixed with water and set aside to cool.
  2. Make the Crust: Preheat your oven to 350°F (180°C). In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press the mixture into a pan and bake for 7-8 minutes. Allow it to cool to room temperature.
  3. Make the Cheesecake Filling: Lower the oven temperature to 280°F (140°C). In a large bowl, beat cream cheese, sugar, and vanilla together. Mix in sour cream and eggs, then sift in cornstarch and blend until the mixture is smooth.
  4. Make the Crumble Topping: In another bowl, combine flour, oats, brown sugar, salt, cinnamon, and melted butter. Mix until crumbly.
  5. Assembly: Pour half of the cheesecake mixture onto the crust. Add the apple filling, and then top with the remaining cheesecake mixture. Finally, sprinkle the crumble topping over everything.
  6. Bake: Bake for 1 hour. Once done, let the cheesecake cool in the oven with the door slightly open. Chill it in the refrigerator for at least 5 hours before serving.

Notes

Serve chilled, with whipped cream or vanilla ice cream for an extra special treat. Store leftovers in an airtight container in the refrigerator for up to 5 days.
