- 1 1/4 cups granulated sugar
- 1 cup sour cream
- 4 eggs
- 2 tablespoons cornstarch
- 3/4 cup all-purpose flour
- 1/2 cup rolled oats
- 1 teaspoon cinnamon
- 1/3 teaspoon kosher salt
- 3.1 oz unsalted butter, melted
- 1/3 cup brown sugar
Instructions
- Prepare the Apple Filling: In a saucepan, combine butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and salt. Add sliced apples and cook for 10 minutes. Stir in cornstarch mixed with water and set aside to cool.
- Make the Crust: Preheat your oven to 350°F (180°C). In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press the mixture into a pan and bake for 7-8 minutes. Allow it to cool to room temperature.
- Make the Cheesecake Filling: Lower the oven temperature to 280°F (140°C). In a large bowl, beat cream cheese, sugar, and vanilla together. Mix in sour cream and eggs, then sift in cornstarch and blend until the mixture is smooth.
- Make the Crumble Topping: In another bowl, combine flour, oats, brown sugar, salt, cinnamon, and melted butter. Mix until crumbly.
- Assembly: Pour half of the cheesecake mixture onto the crust. Add the apple filling, and then top with the remaining cheesecake mixture. Finally, sprinkle the crumble topping over everything.
- Bake: Bake for 1 hour. Once done, let the cheesecake cool in the oven with the door slightly open. Chill it in the refrigerator for at least 5 hours before serving.
Notes
Serve chilled, with whipped cream or vanilla ice cream for an extra special treat. Store leftovers in an airtight container in the refrigerator for up to 5 days.
