  • 2 teaspoons vanilla extract
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 4 eggs
  • 2 tablespoons cornstarch
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/3 teaspoon kosher salt
  • 3.1 oz unsalted butter, melted
  • 1/3 cup brown sugar

Instructions

  1. Prepare the Apple Filling: In a saucepan, combine butter, water, brown sugar, cinnamon, lemon juice, nutmeg, and kosher salt. Add sliced apples and cook for about 10 minutes. Stir in cornstarch mixture and set aside to cool.
  2. Make the Crust: Preheat the oven to 350°F (180°C). Mix graham cracker crumbs with sugar, cinnamon, and melted butter. Press into a springform pan and bake for 7-8 minutes. Let cool.
  3. Make the Cheesecake Filling: Lower the oven to 280°F (140°C). Beat cream cheese, granulated sugar, and vanilla until creamy. Add sour cream and eggs one at a time, then sift in cornstarch and mix until smooth.
  4. Make the Crumble Topping: Combine flour, oats, brown sugar, kosher salt, cinnamon, and melted butter until well mixed.
  5. Assembly: Pour half of the cheesecake mixture onto the crust. Top with cooled apple filling, then add remaining cheesecake mixture and cover with crumble topping. Bake for about 1 hour until set.
  6. Chill and Serve: Let cool in the oven with the door ajar for 1-2 hours, then refrigerate for at least 5 hours before serving.

Notes

Use a mix of sweet and tart apples for more flavor. Make sure the cream cheese is at room temperature for a smooth filling. Don’t skip the chilling step to ensure proper setting.
