  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups apples, peeled, cored, and chopped
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla extract.
  5. Alternate adding the dry ingredients and sour cream, starting and ending with the flour mixture.
  6. Fold in the chopped apples and walnuts.
  7. Pour the batter into the cake pan and bake for 35-40 minutes until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. For the caramel drizzle, combine brown sugar, butter, and heavy cream in a saucepan over medium heat. Simmer for 2-3 minutes until thickened. Stir in vanilla extract and a pinch of salt.
  10. Drizzle the caramel over the cooled cake, slice, and serve.

Notes

Serve with vanilla ice cream or a cup of coffee for a perfect treat. Store in an airtight container for up to three days.
