A delightful dessert combining peanut butter and creamy custard filling in a flaky pie crust.

- 1 pre-baked 9-inch pie crust
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar
- 3 cups whole milk
- 3/4 cup granulated sugar
- 1/3 cup cornstarch
- 3 large egg yolks
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Optional: crushed peanuts or chocolate shavings for garnish
Instructions
- In a mixing bowl, combine the peanut butter and powdered sugar. Use a fork to mix until crumbly in texture. Set aside.
- In a medium saucepan, heat the milk over medium heat until warm but not boiling. In a separate bowl, whisk together the granulated sugar, cornstarch, egg yolks, and salt. Gradually add a few tablespoons of the warm milk to temper the eggs, whisking continuously. Slowly pour the tempered egg mixture back into the saucepan, whisking constantly. Cook over medium heat until thickened and bubbling, about 7–10 minutes. Remove from heat and stir in vanilla extract.
- Sprinkle half of the peanut butter crumble evenly over the bottom of the pre-baked crust. Pour the warm custard filling over the crumble, spreading it evenly. Sprinkle the remaining crumble over the top.
- In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream evenly over the cooled custard filling.
- Refrigerate the pie for at least 4 hours or until set. Garnish with crushed peanuts or chocolate shavings before serving, if desired.
Notes
Make sure to fully cool the custard filling before adding the whipped cream to prevent it from melting. For added flavor, consider using crunchy peanut butter.
