Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped dried cherries
  • 1/2 cup finely chopped almonds
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Stir in the almond extract until combined.
  4. Gradually add the flour and salt, mixing until the dough starts to come together.
  5. Fold in the chopped dried cherries and almonds until evenly distributed.
  6. Shape the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  8. Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm.
  9. Let the cookies cool completely before storing them in an airtight container.
