- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, sifted
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup finely chopped dried cherries
- 1/2 cup finely chopped almonds
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and 1/2 cup of powdered sugar until light and fluffy.
- Stir in the almond extract until combined.
- Gradually add the flour and salt, mixing until the dough starts to come together.
- Fold in the chopped dried cherries and almonds until evenly distributed.
- Shape the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.
- Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm.
- Let the cookies cool completely before storing them in an airtight container.
