Description
Crispy on the outside and fluffy on the inside, these air fryer baked potatoes are a quick and easy side dish that pairs well with many meals.
Ingredients

- 4 medium russet potatoes
- 2 tbsp olive oil
- Salt (preferably flaky sea salt)
- 4 tbsp unsalted butter (1 tbsp per potato)
- 2 tbsp chopped fresh chives
- Black pepper, to taste
Instructions
- Scrub the potatoes clean and pat them dry. Rub each potato with olive oil and sprinkle with salt.
- Place the potatoes in the air fryer basket. Cook at 400°F (200°C) for 35–40 minutes, flipping halfway through, until the skins are crisp and the potatoes are fork-tender.
- Slice the tops open and fluff the insides with a fork. Add 1 tablespoon of butter, chives, salt, and pepper to each potato.
- For extra melt and crispiness, return the potatoes to the air fryer for 2–3 minutes.
Notes
Choose similar-sized potatoes for even cooking. Don’t overcrowd the air fryer basket.
