Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice for the glaze
  • Zest of 1/2 lemon for the glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the lemon juice, lemon zest, vanilla extract, and buttermilk until smooth and fully combined.
  6. Gradually add the dry ingredients, mixing just until incorporated.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth to make the glaze.
  11. Once the cake has cooled, drizzle the glaze over the top.
  12. Serve and enjoy!

Notes
