- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup buttermilk
- 2 tbsp fresh lemon juice
- Zest of 1 lemon
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice for the glaze
- Zest of 1/2 lemon for the glaze
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or a loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the lemon juice, lemon zest, vanilla extract, and buttermilk until smooth and fully combined.
- Gradually add the dry ingredients, mixing just until incorporated.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth to make the glaze.
- Once the cake has cooled, drizzle the glaze over the top.
- Serve and enjoy!
