A showstopper dessert with 24 layers of rich chocolate cake and silky filling, perfect for special occasions.

- 1 3/4 cups unsalted butter, softened
- 4 1/2 cups sugar
- 6 large eggs
- 1 1/2 cups cocoa powder
- 4 cups flour
- 1 1/2 tsp salt
- 3 tsp baking soda
- 1/2 tsp baking powder
- 1 cup + 2.5 tbsp cold coffee
- 1 cup + 2.5 tbsp milk
- 4 tsp vanilla extract
- 2 cups milk
- 2 cups + 2.5 tbsp heavy cream
- 2 eggs
- 2 egg yolks
- 3/4 cup sugar
- 6 tbsp flour
- 1/2 cup cornstarch
- 8 oz semisweet chocolate, chopped
- 5 oz semisweet chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C). Spray two 9 x 3-inch round cake pans and line the bottoms with parchment paper.
- Sift together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, combine cold coffee, milk, and vanilla extract.
- Cream the softened butter and sugar until light and fluffy, then add the eggs one at a time.
- Mix the dry and wet ingredients alternately, dividing the batter between the two cake pans.
- Bake for 35-40 minutes, then allow to cool.
- For the filling, mix flour and sugar in a bowl. In another bowl, whisk 1 cup of cold milk with cornstarch.
- Whisk the eggs and yolks in another bowl. Heat the heavy cream and remaining milk to a boil.
- Slowly pour hot milk into the egg mixture to temper the eggs. Stir in the vanilla, sugar, flour mixture, and cornstarch slurry; cook until thickened.
- Remove from heat, add the chopped chocolate, stirring until smooth.
- Trim the tops of the cooled cakes and cut them into 12 layers.
- Layer the cake by placing the first layer down, followed by a thin layer of filling, then the next layer of cake. Repeat until all layers are used.
- Chill in the freezer for 1 hour.
- For the ganache, heat the heavy cream until it starts to boil, then pour it over the chopped chocolate. Let sit for a minute, then stir until smooth.
- Spread the ganache over the cake and decorate with reserved crumbs.
Notes
Ensure your butter is softened to room temperature for easier creaming. Use high-quality chocolate for best flavor.
