24 Layer Chocolate Cake

Description

A showstopper dessert with 24 layers of rich chocolate cake and silky filling, perfect for special occasions.


Ingredients

  • 1 3/4 cups unsalted butter, softened
  • 4 1/2 cups sugar
  • 6 large eggs
  • 1 1/2 cups cocoa powder
  • 4 cups flour
  • 1 1/2 tsp salt
  • 3 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup + 2.5 tbsp cold coffee
  • 1 cup + 2.5 tbsp milk
  • 4 tsp vanilla extract
  • 2 cups milk
  • 2 cups + 2.5 tbsp heavy cream
  • 2 eggs
  • 2 egg yolks
  • 3/4 cup sugar
  • 6 tbsp flour
  • 1/2 cup cornstarch
  • 8 oz semisweet chocolate, chopped
  • 5 oz semisweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C). Spray two 9 x 3-inch round cake pans and line the bottoms with parchment paper.
  2. Sift together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, combine cold coffee, milk, and vanilla extract.
  4. Cream the softened butter and sugar until light and fluffy, then add the eggs one at a time.
  5. Mix the dry and wet ingredients alternately, dividing the batter between the two cake pans.
  6. Bake for 35-40 minutes, then allow to cool.
  7. For the filling, mix flour and sugar in a bowl. In another bowl, whisk 1 cup of cold milk with cornstarch.
  8. Whisk the eggs and yolks in another bowl. Heat the heavy cream and remaining milk to a boil.
  9. Slowly pour hot milk into the egg mixture to temper the eggs. Stir in the vanilla, sugar, flour mixture, and cornstarch slurry; cook until thickened.
  10. Remove from heat, add the chopped chocolate, stirring until smooth.
  11. Trim the tops of the cooled cakes and cut them into 12 layers.
  12. Layer the cake by placing the first layer down, followed by a thin layer of filling, then the next layer of cake. Repeat until all layers are used.
  13. Chill in the freezer for 1 hour.
  14. For the ganache, heat the heavy cream until it starts to boil, then pour it over the chopped chocolate. Let sit for a minute, then stir until smooth.
  15. Spread the ganache over the cake and decorate with reserved crumbs.

Notes

Ensure your butter is softened to room temperature for easier creaming. Use high-quality chocolate for best flavor.
